Sandy’s Famous Cheesecake
Ingredients for crust
1 1/2 cups cinnamon graham crackers, ground in food processor
2 tbs. powdered sugar
1 stick butter
2 tsp. cinnamon
Ingredients for filling
3 - 8oz packages cream cheese, softened
4 eggs
1 1/2 cups sugar
1 tsp. vanilla
Ingredients for topping
1 cup sour cream
2 tbs. powdered sugar
1 tsp. vanilla
Outrageous Fudge Sauce
Directions for crust
Melt butter in small pot
Mix in graham cracker crumbs, sugar, and cinnamon
Press mixture into bottom of springform pan with back of a spoon
Directions for filling
In food processor, cream sugar and cream cheese, adding sugar gradually
Add eggs, one at a time, mixing well before adding each egg
Add vanilla and pour into crust
Bake at 350 degrees for 60 minutes. Allow to cool on cake rack for 15 minutes (center will depress slightly) whilst heating oven to 425 degrees
Directions for topping
Combine sour cream, powdered sugar, and vanilla
When cake has cooled 15 minutes, pour topping into center of cake just to the raised edge of the cake and no more
Bake an additional 10 minutes at 425 degrees
Cool completely before serving
When ready to serve, drizzle Francine’s Outrageous Fudge Sauce over top of cake and offer a pitcher of warm sauce to pour around each slice
