Sandy’s Famous Cheesecake

Ingredients for crust

  • 1 1/2 cups cinnamon graham crackers, ground in food processor

  • 2 tbs. powdered sugar

  • 1 stick butter

  • 2 tsp. cinnamon

Ingredients for filling

  • 3 - 8oz packages cream cheese, softened

  • 4 eggs

  • 1 1/2 cups sugar

  • 1 tsp. vanilla

Ingredients for topping

  • 1 cup sour cream

  • 2 tbs. powdered sugar

  • 1 tsp. vanilla

  • Outrageous Fudge Sauce

Directions for crust

  • Melt butter in small pot

  • Mix in graham cracker crumbs, sugar, and cinnamon

  • Press mixture into bottom of springform pan with back of a spoon

Directions for filling

  • In food processor, cream sugar and cream cheese, adding sugar gradually

  • Add eggs, one at a time, mixing well before adding each egg

  • Add vanilla and pour into crust

  • Bake at 350 degrees for 60 minutes. Allow to cool on cake rack for 15 minutes (center will depress slightly) whilst heating oven to 425 degrees

Directions for topping

  • Combine sour cream, powdered sugar, and vanilla

  • When cake has cooled 15 minutes, pour topping into center of cake just to the raised edge of the cake and no more

  • Bake an additional 10 minutes at 425 degrees

  • Cool completely before serving

  • When ready to serve, drizzle Francine’s Outrageous Fudge Sauce over top of cake and offer a pitcher of warm sauce to pour around each slice
